Ingredients(Measurements) :
1. 1 bunch of collards.
2. 1 bunch of spring onions- just the green part not the roots.
3. Salt to taste.
4. 1/2 of a lemon’s juice.
5. 1 Tbsp sesame seeds
6. 10 Cashews
7. 10 walnuts
8. Grated ginger – 1/4 tsp (Optional)
9. 1 tsp of sesame/olive oil.
Preparation:
1. Chop collards and spring onions finely.
2. Add all ingredients together and mix with a spoon.
Serving :
Serves 2 as a salad. To make it more filling you can add steamed quinoa / puffed amaranth if you are not 100% raw.

Its all about eating more and more greens with a smile. Add them with your favorite steamed vegetables. Here is one of my favorites.
Ingredients(Measurements) :
1. 2 Big Green unripe Plantain Bananas.
2. 2 Bunches Romain Lettuce.
3. 1 Bunch Spinach.
4. Salt to taste.
5. Cayenne to taste.
6. 1 Tbsp oil.
7. Optional : If you like, you can give tadka of udad dal,rai,jeera,lal mirch.(seasoning of roasted mustard seeds, cumin seeds, red chilli)
Preparation:
1. Cut bananas in thick round shapes without peeling.
2. Steam for 10-15 minutes. Use a fork to see if its rightly cooked.
3. Remove the peel.
4. Cut each round piece into 4 parts.
2. Place banana pieces in a bowl and mix with remaining ingredients.
Tip:
First try this combination and then you can be creative with the choice of greens .
If you have reached to 2 bunches of raw greens everyday you are great !!

I had started with 5 leaves of raw greens , yes just 5 leaves of spinach.
I have now reached to 1-1.5 bunches of raw greens everyday, in 18 months time.
There is no need to set goals. Start with few leaves and the body will guide you.

Ingredients(Measurements) :
1. 1 Potato.
2. 1 bunch Spinach.
3. 1/2 Cabbage.
4. 1/2 Onion.
4. Salt to taste.
5. Cayenne to taste.
6. 1 Teaspoon oil.
Suggested Tool:Mandolin

Preparation:
1. Use a mandolin to slice cabbage to look like noodles.If you don’t have one, just chop into thin long stripes using a knife.
2. Use a mandolin to slice broad noodles of onion.
3. If using baby spinach use as is. If using regular spinach, chop into big pieces.(I prefer tearing greens with hands rather than using knife. It somehow tastes better)
3. Steam Potato for 10 minutes.
4. Mix all with salt,cayenne,oil.

Ingredients(Measurements) :
1. 1 bunch Arugula
2. 1 Apple.
3. 1/2 Avocado.
4. 2 Celery stalks.
5. Salt to taste.
6. 1 Teaspoon oil.
Preparation:
1. Cut apple into small cubes.
2. Cut avocado into small cubes.
3. Cut celery lengthwise into two, then into very small cubes, about 1cm.
4. Mix all above with remaining ingredients.

Ingredients(Measurements)
Base :
1. 2 large fennel bulbs, halved,cored and stalks removed.
2. 3 chamomile tea bags
3. 1/4 cup white wine vinegar
4. 1 teaspoon hcopped fresh rosemary
5. 1/2 cup extra-virgin olive oil
6. 1/4 tsp salt
7. 1/4 tsp freshly ground pepper
Preparation
Thinly slice fennel bulvs, diagonally, and place in a large bowl.
Set aside.
In a bowl, steep tea bags in vinegar for 15 minutes.
Squeese out tea bags into bowl and discard bags.
Add rosemary to vinegar-n-tea mixture and whisk in olive oil.
Add salt and pepper.
Drizzle vinaigrette over fennel, and refrigerate salad until ready to server.

This is an amazing looking and tasting salad. Thanks to my colleague Oksana for introducing it to me

Ingredients(Measurements) :
1. 1/2 Green Cabbage
2. 1/2 Cucumber.
3. 5 sprigs of Dill.
4. 1 Tablespoon olive oil.
5. 1 Teaspoon lemon juice.
6. Salt to taste.
Preparation:
1. Shred Cabbage, preferably using a mandoline, so that it look Great !
2. Massage Cabbage with you hands.
3. Make small cone shape pieces of cucumber.
4. Chop Dill.
5. Mix the above ingredients with salt,oil,lemon juice.
6. Optionally Chill for sometime.

I used to hate sea vegetables for their smell. One day by mistake I discovered two ways to get rid of the smell.
1. Soak them overnight.
2. Soak them for 15 minutes and dehyrate for 30 mins at the lowest temperature.
Ingredients(Measurements) :
1. 1 cup tiny cubes of firm Tofu.
2. 1 cup soaked Arame.
3. 2 cups freshly chopped Parsley.
4. 1 teaspoon Garam Masala or Cayenne.
5. Sea salt to taste
6. 1 Tablespoon olive oil.
Preparation:
1. Mix all and deyhdrate for 30 minutes at the lowest temperature.

This is extremely quick and tasty salad, also looks beautiful with white,orange,yellow,red,brown colors !
Ingredients(Measurements) :
1. 2 cups finely chopped cauliflower.
2. 5 mini sweet peppers of red,yellow,orange colors.
3. 2 teaspoons Tamari.
4. Pinch of Cinnamon powder.
5. Pinch of Clove powder.
6. 1 Tablespoon olive oil.

I used to not love arugula before discovering this salad. Now I make it again and again.
Ingredients(Measurements) :
1. 3 Hands ful fresh baby arugula
2. 4 Strawberries cut in 8 parts each.
3. 1 cup fresh young thai coconut meat pieces (as big as strawberry pieces)
4. 10 sun-dried cranberries and 10 walnuts
5. Sea salt to taste
6. Juice of half lemon
7. 1 Tablespoon olive oil.
Preparation:
1. Mix all and let it marinate for 10 minutes.

Ingredients:
1. 2 Carrots.
2. 1 tablespoon chopped Parsley.
3. Salt to taste
4. 1 teaspoon olive oil.
5. 10 raw walnuts.
6. 1 teaspoon lime juice.
7. 1/2 teaspoon cumin powder.
8. Dash of Cayenne.
Preparation:
Grate Carrots using a madoline/peeler , as noodles.
Add all other ingredients and mix thorougly.
Serves:2 .
