Lucuma/Luma Recipes

Lucuma powder is sold in the US at high prices and branded as a super food. It is the powder of a fruit which grows here very easily.

Fresh fruit is weird to taste and I could not eat it as is. So here are some delicious recipes:

  1. Creamy custard: Lucuma fruit, honey. Blend and serve.
  2. Smoothie: 20 Strawberries, 1 Lucuma, 2 cups of Coconut water, 1 tbsp Maple syrup, 1/4 tsp vanilla powder.
  3. Smoothie: quarter melon, 7 apricots, 1 lucuma, agave nectar.
  4. Ice-cream: 1 frozen banana 1, 1 lucuma. Blend and serve.

Yucca Zucar

That’s the name I gave them . I am not a dessert girl since I eat lots of fruits. But sometimes I just want to try something new. We get a potato called Yucca which we can also find in south india and all over India in pearl form known as Sago/ Sabudana etc.

In India Sago is used in hundreds of preparations like khicdi, pudding, papad. I will be sharing those recipes soon or you can search on youtube. Youtube has thousands of indian recipes . I get asked many times by my friends here to share indian recipes, but nowadays it is so easy to watch them on youtube,so just sharing this tip here.

Yucca/ Cassava can be prepared in savory, sweet dishes in many ways. I found a recipe of a steamed cake and steamed pichi-pichi on youtube. The below recipe is a variation to it.

Just grind some fresh(stored in refrigerator in water for few days) yucca WITHOUT any water in your blender or food processor.

Mix sugar, cardamom/vanilla/orange flavour in the dough, make your favorite shapes, stick some nuts in them and steam them for 30 minutes. You could also add some coconut oil or coconut milk, but I did not do so this time.

Remove from heat, and peel off the banana leaf, cut into cubes if you had steamed a big piece. Let it cool. Store in the fridge.

These feel like the little gelatin candies which kids like to eat. Last photo is of the leftover ball I got creative with, but the pan cooked one turned out hard. So stick to steaming (9 photos)

Sprouted Wheat Porridge (Kheer/Paayasam)

1. 1/4th cup sprouted wheat grains.
2. 1/8th cup sprouted buckwheat grains (optional).
3. 1 cup soaked almonds. Hazelnuts will also do but almonds are the best for this recipe.
4. 3 cardamom cloves.
5. Sugar of your choice to taste like jaggery, agave, honey. Raw jaggery tastes the best.
6. Few sprigs of saffron.
7. Pinch of salt.
8. 5 Pistachios.
9. 7 cashews.
10. 10 raisins.
11. 2 Tbsp coconut oil.
12. 2 cups of warm water.

Preparation
Soak cashews and raisins in warm coconut oil and keep aside for garnish.

Make nutmilk out of almonds by adding warm water.

Optionally steam wheat grains and buckwheat grains.

Blend sugar, salt, nut milk and grains together so that the grains get crushed. Make sure they do not get pasty. Blend on just enough speed to turn the grains to the consistency of cooked tapioca grains(Sabudana) or rice with which this dish is traditionally made in India. Transfer to a big bowl.

Make powder of cardamom seeds and pistachios. Add it to the big bowl.

Add the coconut oil along with raisins and cashews.

Dress with saffron.

Raw Sprouted Wheat Sweet Breakfast

Ingredients

1. 1/4th cup wheat grains soaked and sprouted.
2. 1/4th cup lentils of your choice soaked and sprouted. I have used black lentils which sprout very easily. (Optional).
3. 1/8th cup sprouted buckwheat grains.
4. 15 groundnuts soaked and sprouted.
5. 1/8th cup sesame seeds soaked and sprouted.
6. 20 raisins soaked overnight.
7. 7 dates soaked overnight.

Procedure

Chop soaked dates. Mix all ingredients together.

Add pinch of salt, honey or agave nectar to taste, ground pistachios, pinch of nutmeg powder , pinch of cardamom powder and few walnuts broken into small pieces.

Enjoy!

Variations : Use as a cereal with nut milk.

Raw/Steamed Oatmeal Porridge (Kheer)

Ingredients(Measurements)
*
1. 1 cup raw hulled Oat grains.
2. Pinch of Cinnamon Powder.
3. 1 Cardamom cloves.
4. Pinch of Nutmeg Powder.
5. Pinch of Sea salt.
6. 1 full heap Tsp Raw Honey.
7. 2 Tsp Sucanat (Raw Cane Sugar will also do if you do not have sucanat).

For Nutmilk:

1. 1 cup soaked Almonds.

For Garnish:
1. 1 Tsp warm coconut oil.
2. 10 Cashews.
3. 20 raisins.

Preparation
Soak Oats for 12 hours.
Drain and let them sit in a half covered jar for 24 hours, so that they sprout( you wont see any shooting sprouts though)
Rinse.
Optionally steam them for just 10 minutes.

Soak cashews and raisins in warm coconut oil and keep aside for garnish.

Make nutmilk out of almonds by adding 1 glass water.

Blend the oats, nut milk and all other ingredients* except garnish ingredients. Blend in such a way that oats are coarse ( size of couscous )

Dress with garnish.

Pecan Goji Bliss


This is the quickest dessert I have ever invented 🙂

Ingredients(Measurements)
1. 1 cup soaked pecans.
2. 1/2 cup soaked goji berries.
3. 2 teaspoons soaked chia seeds.
4. 1 tablespoon agave nectar.

Preparation
Blend pecans and berries together. Transfer to a bowl. Add agave nectar and chia seeds.
And your are done !!.

Makes: 1 bowl of dessert

Raw Vegan Chocolate Icecream


Ingredients(Measurements)

1. Meat from 2 Thai Young Coconuts.
2. Water from 1 Young Coconut.
3. 2 full teaspoons coconut butter.
4. 2 full teaspoons coconut oil.
5. 3 full teaspoons raw cacao powder.
6. 3 drops of Vanilla flavour.
7. 2 tablespoons Agave nectar.
8. Pinch of crystal salt

Preparation
Blend the coconut meat first, add cacao powder and blend again. Add the remaining ingredients except coconut water. Once everything is blended well, keep adding coconut water little by little until you get the consistency of a thick but flowing paste.

Transfer to a metal container or icecream maker.

Freeze

Serves :2
Tip: I tell you what. Garnish this with nuts and fruits and serve someone, without telling that its a raw vegan icecream. And you will be amazed that they will not even know that.

Raw Carrot Halwa


This is the most loved indian dessert. The raw version, is surprisingly more tasty and does not make you feel heavy at all, unlike the cooked version.

Ingredients(Measurements)

1. 3 Carrots , medium size
2. 3 Soaked Dates
3. 15 pecans
4. 1 tablespoon cashew butter
5. Some raisins and cashews for garnish

Preparation
Grind the pecans to make a powder. Keep aside in a big bowl.
Grate/Grind in a food processor, dates and carrots.Pour this mixture into the big bowl and mix with the pecan powder and cashew butter thoroughly with your hands.
Refrigerate.

Garnish with raisins and cashew pieces, before serving.

Makes: 1 bowl of dessert

Raw Chocolate Cookies

Ingredients(Measurements)
1. 1 cup raw cocoa powder
2. 2 cups coconut butter
3. 1 teaspoon vanilla extract
4. 1 cup cashews/almonds soaked overnight
5. 1/2 cup agave nectar or any natural sweetener of your choice.

Preparation
1. Blend all together adding hot water to get creamy consistency.
2. Drop one heap of teaspoonful of the mix onto the sheet and flatten with the back of the spoon.
Repeat until done.
3. Dehydrate overnight.
4. Refrigerate.

Coconut Icecream

Ingredients(Measurements)

1. 2 Thai Young Coconut
2. Water from 1 Young Coconut.
3. 1/2 cup coconut butter.
4. 5 drops of Vanilla flavour
5. 2 tablespoons Agave nectar
6. Pinch of kelp powder(optional)
7. Pinch of crystal salt

Preparation
Blend all ingredients. Transfer to a metal contain or icecream maker. Freeze

Serves :2
