Ingredients(Measurements) :
1. 1 bunch of collards.
2. 1 bunch of spring onions- just the green part not the roots.
3. Salt to taste.
4. 1/2 of a lemon’s juice.
5. 1 Tbsp sesame seeds
6. 10 Cashews
7. 10 walnuts
8. Grated ginger – 1/4 tsp (Optional)
9. 1 tsp of sesame/olive oil.
Preparation:
1. Chop collards and spring onions finely.
2. Add all ingredients together and mix with a spoon.
Serving :
Serves 2 as a salad. To make it more filling you can add steamed quinoa / puffed amaranth if you are not 100% raw.

This recipe can be called a cocktail if more water and ice are added.
The fennel gives it a little bit of wine-like taste.
Ingredients(Measurements)
- Juice Oranges – 3
- Dry Cranberries – 1/4 cup
- Fennel Leaves from 4 stalks

Blend adding 1 glass water .

Ingredients(Measurements)
1. 8 BIG Carrots. Yes 8 of them . If you are not in US, you can add more carrots. US carrots are 4 times the size of Indian Carrots !!.
2. 2 Sweet Apples. You can add any fruit after trying this recipe. You can also add a green leaf vegetable or herbs.
3 . 4 Pinches of Himalayan Pink Salt (Or any healthy salt like sea salt, rock salt)
Preparation:
Just Blend adding 1 glass water. You will have a thick fibre-full paste. Now strain it using a cloth/ nut milk bag.
Makes:4 Glasses of Delicious drink. It looks great too. !! This is the first time I made it and I was a bit skeptical because I have had carrot juice before in Indian streets but never much loved it. Adding apples made the biggest difference I guess.

Ingredients(Measurements)
*
1. 1 cup raw hulled Oat grains.
2. Pinch of Cinnamon Powder.
3. 1 Cardamom cloves.
4. Pinch of Nutmeg Powder.
5. Pinch of Sea salt.
6. 1 full heap Tsp Raw Honey.
7. 2 Tsp Sucanat (Raw Cane Sugar will also do if you do not have sucanat).
For Nutmilk:
1. 1 cup soaked Almonds.
For Garnish:
1. 1 Tsp warm coconut oil.
2. 10 Cashews.
3. 20 raisins.
Preparation
Soak Oats for 12 hours.
Drain and let them sit in a half covered jar for 24 hours, so that they sprout( you wont see any shooting sprouts though)
Rinse.
Optionally steam them for just 10 minutes.
Soak cashews and raisins in warm coconut oil and keep aside for garnish.
Make nutmilk out of almonds by adding 1 glass water.
Blend the oats, nut milk and all other ingredients* except garnish ingredients. Blend in such a way that oats are coarse ( size of couscous )
Dress with garnish.
Serves : 2

Ingredients:
1. 2 Rainbow chard leaves. Even Red leaf lettuce can be used.
2. 1/4 Avocado
3. 1/4 Lemon peeled
4. 1/3 of small red onion peeled
5. 8 Basil leaves
6. 2 Celery sticks / 4 celery heart sticks
7. 2 cups water lukewarm
8. Salt to taste
Preparation:
Blend all the ingredients with hot water/ cold water to get desired consistency, depending on what you want- smoothie or curry or thick soup.
This is super tasty and filling. Its just enough for a light dinner.
Serves:2 small bowls.

Don’t have time to go thru the recipes?. OK. Here is a quick list of breakfasts. All with greens and fruits.
I highly recommend getting a vita mix for an extremely quick, nutritious way of blending.
1. Avocado, Bananas- blend. Dress with blueberries/strawberries.
2. Spinach, Mango – blend
3. Banana, Kale, Water – blend.
3. Papaya, Banana, Tahini – blend. Dress with blueberries/strawberries.
4. Celery, Orange, Water – blend. Add ice optionally.
5. Orange, Collard, Water – blend.
6. Orange, Apple, Chard, Water – blend.
7. Nutmilks – Soaked nut of your choice, Water, Honey , Nutmeg powder, Cardamom powder – blend. Strain the pulp if desired. Use the pulp in soups, dehydrated breads, dehydrated cookies. Refrigerate the milk and sip with straw on hot summer noon.
By the time you try these, you would have your own recipes. Take care.
Note: Do not eat nuts with fruits/starchy vegetables. You will have bloating !!!.

5. 6 strawberries

7. Agave nectar as per taste.

Ingredients(Measurements)
1. 1 cup of nuts (Hazelnut,walnut,almonds,pecans) of your choice soaked overnight.
2. 1 apple sliced into small pieces
3. 1 banana sliced into small pieces
4. 1 pack of blueberries
5. 2 teaspoons hemp seeds
6. 4 teaspoons sunflower seeds soaked overnight.
7. 1 teaspoon freshly ground flax powder
8. 4 teaspoons dry coconut powder
9. 1/4 teaspoon cardamon powder
10. Few drops of vanilla extract
11. Pinch of nutmeg powder.
12. 2 teaspoons honey/1 teaspoon of agave nectar.
13. 2 teaspoons Chia seeds (optional).
Preparation
Prepare the nut milk : Blend the nuts with 2 cups of water to get the milk.
Strain it if desired(optional). You can reuse the thick fiber in making bread.
Add Honey/agave nectar to the milk and blend again.
Pour the milk into a bowl. Add all other ingredients. Chill for few minutes and enjoy.

If you are from India and miss ganna ras, you will love this bcaz it tastes like ganna ras(sugarcane juice) !
Ingredients(Measurements)
1. 1 orange
2. 2 big stalks of celery
3. 1 glass of cold water
Preparation
Blend all ingredients together.
Chill for sometime.
Try it after a long summer day and you will be delighted !!.
Add ice if you wish.
Makes: 2 glasses of juice

Ingredients(Measurements)
1. 3 celery stalks
2. 3 kale or collard leaves
3. 1/2 cucumber
4. 1/3 bunch parsley or cilantro
5. 1/4th lemon
9. Salt to taste.
10. Dash of turmeric.
11. Dash of cayenne.
Preparation
1. Blend all ingredients except lemon.
2. Strain thru a strainer or cloth.
3. Add the same quantity of water to the juice to dilute it.
2. Add lemon juice and serve immediately or refrigerate.
Serves :2
Note: Green juice should be sipped slowly, not gulped !!. The more it assimilates with our saliva, the better it works.
